The Moth
Written by Unknown Author A man found a cocoon of an emperor moth. He took it home so that he could watch the moth come out of the cocoon. One day, a small opening appeared, he sat and watched the moth for several hours as the moth struggled to force its body through that little hole. Then it seemed to stop making any progress. It appeared as if it had gotten as far as it could go no farther. It just seemed to be stuck. Then the man, in his kindness, decided to help the moth, so he took a pair of scissors and snipped off the remaining bit of…

My Life During COVID – Part 2
This week marks my twelfth week working from home. I purely enjoy it because I have so much more energy in the morning. I get more hours of sleep without the commute time in traffic. I get more work done without distractions. Some days I do miss the human connection. Laughter that echoes throughout the office. Something you can’t recreate from a phone call or a video conference. I do believe that this is the future. California is slowly re-opening for non-essential businesses. The state has provided strict guidelines for retailers to follow and promote social distancing. Food supplies are coming back on the shelves and toilet paper is more…

My Life During COVID – Part 1
Never in my wildest dreams would I have imagined something like the coronavirus can happen in California or even anywhere in the world. The scary part is that we are not prepared for this type of epidemic. It feels like a script from a horror movie. One day your life is normal and the next day you’re being quarantined to prevent further outbreak. Our life will never be the same after this experience. In fact, my life is already changing. Buying Behavior I prioritize my spending on bare essentials only. Who knew that toilet paper has become a rare commodity? Overnight Americans have become germ-a-phoebes buying Purell, Clorox and…

Experience Game of Thrones in 2 Days
Don’t want Game of Thrones to come to an end? Then experience GoT in real life! Read on to learn about my 2-day trip to live this dream. I was looking for my next vacation destination and my friend suggested, “You should look for your Jon Snow in Croatia, where Game of Thrones is being filmed.” “REALLY?! Where is Croatia?” I responded. Yes, I’m geographically challenged. So I did research on Croatia to truly immerse myself in the Game of Thrones world. I immediately fell in love with Dubrovnik, where it inspired George R. R. Martin to write Game of Thrones and ultimately create King’s Landing. I prefer arrive by…

Bacon for Dinner?!
I’m a late bloomer to loving bacon. I had no idea what the big deal was until I discovered something called thick cut! I was making brunch for my friends so I decided to add thick cut bacon to the menu. It wasn’t bad for breakfast. It was ok. Then a week past I still had half a pack of bacon leftover. I was emptying out all the perishables from my fridge before a business trip. What to do? I cooked a fresh batch of white rice. My favorite Japanese rice brand is Nishiki. I like my rice soft. I had a bag of green onions to use. What I…

Holiday Breakfast: Baked Eggs in Hash Brown Nests
Happy Thanksgiving everyone! So much has happened in the world this past year that it’s good to make time and show your appreciation for the people in your life. I tweet my gratitude on Twitter so hope that inspires you to do the same. It takes less than a minute to journal – saves paper! When it comes to lazy recipes, I really like this one I saw from “The Pioneer Woman” on Food Network. I am not a big fan of Ree Drummond but her breakfast recipes are easy to make. I prefer calling this hash brown “nests” because they remind me of the Chinese bird’s nest recipe. The…

Comfort Food: Macaroni and Cheese
This is embarrassing. I have never made macaroni and cheese in my life. Not even the instant kind that comes in a box. First, I am not much of a cheese person. I am very particular with my cheeses. My range of cheese favorites include brie, Swiss and mozzarella (a recent addition). I was hesitant about this recipe because it seems to have more cheese than I can handle – the fear of the pungent smell. Boy, was I wrong. The smell was not overpowering at all. This is truly comfort food because its aroma defines just that. I served this in small plastic cups at my Christmas party. It…

Caprese Orecchiette Salad
I took a flight out of LAX’ Delta Airline terminal and discovered a food court called Lemonade. I did not expect anything great but I was pleasantly surprised. I was instantly hooked on their Cucumber Mint Lemonade (a recipe on the list to crack) and Caprese Orecchiette Salad. Now that airlines no longer provide lunch or dinner unless it’s a long flight, you should purchase something before you board the plane. Otherwise, you are stuck with the last tuna salad sandwich. Soon after I returned from my trip, I searched for the Caprese Orecchiette Salad recipe. I still have not nailed it down but this one was just as…
